Strawberries!


Daily Tidbit:   Strawberries are delicious, that is reason enough to enjoy them!  They made for a perfect dessert for me tonight:  1 cup = 43 calories & provide 136% of my Vitamin C for the day!  However, if you need more reasons to enjoy them, here are 8:

Joe's O's with Walnuts & Blueberries

Breakfast: Joe's O's Toasted Oat Cereal with Walnuts & Blueberries
1 cup of Joe's O's Toasted Oat Cereal
1 cup of Fat Free Milk
1 cup of Fresh Blueberries
2 tbsp Walnuts
5 oz. Orange Juice
Regular Coffee, black

Salad Sampler Picnic for Lunch!
 


Lunch: Salad Sampler Picnic!  (all store bought items)
1 cup of Crunchy Veggie Salad: Carrots, Broccoli, Cauliflower, Red Onions, Raisins, Dried Cranberries, Sunflower Seeds, Mayo based dressing
Tomato Basil Mozzarella Salad
Chicken Salad 
1 slice of Reduced Fat Provolone
2 Honey Roasted Turkey cold cut roll ups
1 tbsp Spicy Brown Mustard (not pictured - for dipping for my cheese & turkey roll ups into)
1 serving (19 chips) of Kettle Cooked Cape Cod Brand Potato Chips (also not pictured - I caved after finishing the food on my plate - but those chips are sooo worth the calories if you can manage to stick to 1 serving!)
1 can Cherry Coke Zero
Water with a splash of Low Cal Lemonade (approx. 1-2 tbsp)

Salmon & Veggies for Dinner!


Dinner: Salmon & Veggies
Baked Wild Alaskan Salmon Fillet:  Topped with Canola oil spray, seasoned with salt/ pepper and cooked in Toaster Oven at 350 for 12 minutes
1/2 Avocado
1/2 cup of Spinach Artichoke Dip Pasta with Sun Dried Tomatoes (recipe below)
1 cup Arugula Peach Tomato & Pine Nut Salad with Sweet White Onion, tossed with Balsamic Vinaigrette
1 cup of Zucchini Gratin leftovers from yesterday (tasted even better today!  The plate shows a 1/2 cup serving, but then I had another 1/2 cup after finishing the food on my plate!)
White Wine
Water 


Toasted Pine Nuts provide an amazing flavor boost for things, in this case a salad.  I buy them and toast a bunch at all once (in Toaster Oven, Broiler setting, for 3-5 minutes, keeping a close eye on them and waiting for the light brownish hue and wonderful aroma to emerge) so then they are ready to go and throw into meals during the week:  Salads, Sandwiches, Pastas, & Pesto.

RECIPES:
 
Spinach Artichoke Dip Pasta with Sun Dried Tomatoes Recipe:
 
Make Spinach Artichoke Dip:
 
Cook pasta and save 1 cup of pasta water on the side.  Add 10 Sun Dried Tomatoes to the pasta water to let them soften for 10 minutes.  In a warm pan add 1 tbsp EVOO, 1/2 chopped Sweet White Onion & 1 container of sliced mushrooms (or buy them whole and slice them).  Cook until veggies are soft and start to brown.  Meanwhile remove Sun Dried Tomatoes and slice them into bite sized pieces.  Add pasta water to Mushrooms & Onions in pan, along with the Spinach Artichoke Dip and Sun Dried tomatoes.  Once blended and warm add the pasta and serve!
